
Ingredients
4 x 250 g lamb racks (3 rib bones each)
3 medium onions, quartered
fresh origanium sprigs
60 ml (⅟₄ cup) olive oil
Topping
60 ml (⅟₄ cup) olive oil
6 cloves garlic, chopped
30 ml (2 Tbsp) sesame seeds
60 ml (⅟₄ cup) chopped fresh origanium
Method

Layer onions and origanium sprigs in an oven-proof dish. Sprinkle olive oil over.

Topping: Mix all ingredients together and spoon on top of racks. Press lightly onto racks. Place racks on onions and herbs.

Place lamb in a preheated oven at 160 °C for 1 – 1 ½ hours or until medium-done. Serve immediately.
Variation
Omit topping and baste racks with a basting sauce consisting of olive oil, lemon juice and herbs.
